Breakfast: Bread Roll Jam
Ingredients
6 slices whole wheat brown bread
Alce Nero Organic Blueberry Jam
3 tablespoons dessicated coconut
Powdered sugar
Method
1. Take bread slices and trim the sides. Using a rolling pin, flatten the bread.
2. Spread required quantity of jam on rolled bread slices and sprinkle some coconut on top. Roll slices from one end towards the other and seal the edges.
3. Heat a pan and add a tablespoon of ghee and arrange the rolled slices. Toast bread rolls in medium flame until they turn golden on all sides.
4. Remove from pan and arrange on a serving plate. Sprinkle powdered sugar on top (optional) and serve.
Lunch: Laksa Johor
This nutritionally balanced traditional dish uses Alce Nero Organic Tricolore Pasta instead of traditional laksa noodles.
Ingredients A - to blend
2 stalks lemongrass
Ginger - 2 inches
Lengkuas - 2 inches
2 big onions
3 dried chillies
8 pieces dried shrimp
Ingredients B
1 kg kembung/parang/sardine fish
1/2 cup fish curry powder
2 cups santan
1 tbsp kerisik
Salt and sugar to taste
1/2 packet Alce Nero Organic Tricolore Pasta
Ingredients C
1/2 cucumber - julienned
A bowl of bean sprouts - blanched
A bowl of long beans - finely sliced
2 calamansi limes
1/2 cup basil leaves
Method
1.Boil fish with water, debone and lightly blend the flesh. Reserve half a cup of the fish stock.
2.Prepare the pasta according to instructions on the pack.
3. Blend ingredients A, saute in oil until fragrant. Stir in blended fish, then add fish curry powder, santan, kerisik and the reserved fish stock. Incorporate well, bring to a boil and allow to thicken.
4. To serve: place a nest of pasta in a shallow bowl, pour over the laksa broth and add julienned cucumber, blanched bean sprouts, finely sliced long beans and onions, fresh basil and sliced calamansi lime.
Dessert: Yoghurt Parfait
This is a go to breakfast, snack or dessert especially on hot and humid days.
Ingredients
1 cup cold Greek yogurt
5 tbsp Alce Nero Organic Blueberry Jam (or more)
4 strawberries, chopped
1/4 cup granola
1 tbsp Alce Nero Organic Honey
Method
1.In a clear glass or jar, lay down Alce Nero Organic Blueberry Jam generously, layer with Greek yoghurt, top with crunchy granola, then decorate with fruits of your choice – berries such as strawberries are pretty, and nutritious.
2. Add a drizzle of Alce Nero Organic honey for additional sweetness. This dish can be made ahead for parties.
