KOTA BARU: Traders selling "ayam tempayan", a local delicacy of chicken roasted inside large earthen jars, have become a regular fixture at Ramadan bazaars and along the roads in the state.
The long queues of customers waiting patiently to buy the crispy and aromatic roasted chickens suggest that business is booming for these traders.
One such trader who has hit the jackpot is Jamil Husin, 48.
Jamil, who is operating in Kampung Kota and has been selling ayam tempayan since 2018, said he was among the few in Kota Baru who had ventured into the roasted chicken business.
"My chickens are different from others as I use a special homemade recipe. I cook them inside six huge jars, which I bought in Thailand.
"By using this traditional cooking method, the chickens become tender, moist and evenly cooked.
"Cooking chicken in huge jars is faster and cleaner compared with grilling openly," he added.
Since many traders have adopted the same method of cooking chicken in earthen jars, Jamil said he planned to use social media to promote his business.
With the assistance of his trusty worker, Jamil said he could sell between 80 and 100 ayam tempayan a day, priced at RM25 per bird or RM12 for half.
