Ramadan blessings for Kelantan kuih akok shop

MACHANG: Ramadan brings bountiful blessings to Kedai Nik Nah Akok, which sells up to 1,000 pieces of traditional kuih daily.

Owner Nik Hasnah Nik Hassan, 44, said on normal days, it could sell only between 200 and 400 kuih akok a day.

However, during Ramadan, the demand increases threefold as visitors flock to the state.

She said the shop in Pangkal Gong, Pulai Chondong, was struggling to keep up with demand.

"On regular days, my husband, Nasir Samat, 47, helps me bake kuih akok.

"During Ramadan, however, I have to hire workers because we cannot handle the orders on our own.

"We start working as early as 6.30am to prepare and bake kuih akok for customers who come to our shop and for orders from government departments," she said in Kampung Pangkal Gong.

The mother of three children, aged between 14 and 21, said she used her own recipe to make kuih akok.

"To prepare kuih akok during Ramadan, we need 2,500 eggs a day, 300 coconuts and raisins.

"Customers who tried our akok praised the raisin-flavoured ones as they are different than the regular ones," she said, adding that she has eight workers.

Nik Hasnah said baking akok required a certain technique, otherwise it would burn or not be properly cooked.

"I had to increase the price of an akok from RM5.50 to RM6 from last year."
